Everyone knows the four seasons - but chef and restaurateur Joshua McFadden adds two more to the classic classification: early summer and late summer. In this cookbook, he shows you how to prepare each vegetable at the optimum time so that it can develop its full flavor. The six seasons also form the chapters of the book, and each chapter begins with recipes that use the fresh vegetables raw, for example in an artichoke salad with herbs, almonds and parmesan. In the following recipes, heat comes into play - grilled, steamed, braised, stewed and sautéed. McFadden takes an in-depth look at each type of vegetable and its benefits in the individual seasons, giving lots of practical tips and encouraging readers to try out the more than 200 wonderful recipes - some vegetarian, some with meat or fish - at home.

About the authors

Joshua McFadden runs the restaurants Ava Gene's and Tusk in Portland, USA. He previously worked as a chef de cuisine in various restaurants. He spent some time in Rome, where he worked on a sustainability project with organic pioneer Alice Waters. He also worked for two years as a manager on a farm in Maine, where he was involved in sustainable vegetable cultivation.
Martha Holmberg is CEO of the International Association of Culinary Professionals. She was previously editor and proofreader of Fine Cooking magazine and editor of the food section of the Oregonian newspaper. She lives in Portland, USA.
